Soppressata cured flat sausage - 250g piece

The name Soppressata derives from the pressure action performed while the product is drying,
giving it a flattened shape. Unlike the classic sausage, the meat used is cut with a
"knife tip", a coarse cut that allows the meat to remain very compact. The soppressata is
prepared with a selection of noble cuts of hams, shoulders and trimmings of bacon and soft
lard (the latter, in particular, are used in order to "soften" the meat used).
